Making a video will be something fun that can make kids remember those camping moments.
Kids now a days are more aware of technology, they learn how to use the computer much younger and hardly any of them doesn't know how to operate a camera, iphone, or cellphone.
My nieces (13, 11 and 10) used to enjoy it greatly when we would go camping to Popopark in Mexico. It was their " I report show" where not only they will report what is happening in the campsite but also they will look at nature trying to find something interesting to record.
You can plan this activity before you leave home by giving them a topic for their "I report", once it has been decided, your kids will love to find things to record.
Of course you will have to trust them the camera and they will have to learn to work as a team, this activity is very good for teaching them team work and to share.
We did one every year since the oldest of my nieces was 7 and is very fun to watch during rainy days and helps plan the video report for the next trip.
